Chicken with Seasonal Asparagus and Jersey Royal potatoes.

A quick delightful treat while Asparagus and Jersey Royal potatoes are still about.


Wash or peel your Jersey Royal potatoes and then boil in salted water.


Place your Asparagus in salted boiling water until lightly cooked.



Next pan fry your Chicken breast until golden and finish off in the oven for about 7 minutes.
Meanwhile saute some strips of bacon and Sundried tomatoes in a pan. Add some of the oil from the sun dried tomato jar and then add your cooked Jerseys and asparagus.
Now make a dressing using a tsp of English Mustard, a splash of Cider vinegar, a dash of water and now slowly add some more of Sundried Tomato Oil into the mix so it all emulsifies together or in my case not ! ha ha !



Assemble the dish in an artistic way...or just chuck it on the plate and then drizzle some of your dressing over it ! ha ha !


Now stick it in your gob and enjoy all those summery flavours ! Enjoy.
