Another day off and some more alfresco dinning !


Had a bit of a wander today around a small place on the coast here in Northumberland called Cambois. Its not exactly a hot spot of local beauty but from a photography point of view its little harbour and derelict buildings make it a bit of a photographic paradise. Took a few snaps for you to view.










Chicken Taco with Chili and Lager sauce.


Yes that's right I substituted the usual Chili and tomato salsa that go with Tacos with a sauce based on a can of lager and a few chills.
You need to sweat 1 large onion, 1 garlic clove, 2 chicken breasts cut into nice strips, 1 finely sliced red chili and 6 slices of thinly sliced chorizo in 1 TSBP of vegetable oil until golden and coloured. I then add 1 sliced roasted red pepper from a jar to the mix and then added a TBSP of smoked Paprika. Stir the mix together and then crumble 1 Knorr chicken stock cube into the pan.

Looks good !

Now add 1 500mls of lager. My weapon of choice was Budweiser.


Simmer to reduce the beer liquid until all you are left with is a thick, gooey, syrupy sauce clinging to your Chicken pieces. If you want to stand over the pan while the beer reduces down and try and get high on the beer steam feel free. I decided to retire to the garden with another can of beer because the nice man in the shop would only sell them to me in packs of 4 ! ha ha !

Now scoop some of the mix into a pre brought taco shell or in my case two ! You can make guacamole  using 1 mashed up ripe Avocado add some finely diced chili to.Add a squirt of lime juice then season and then dollop a nice portion onto the top of Taco Shell. Next sprinkle some grated cheese over the shell and the cook in the oven for about 5 minutes.


I took my taco out with another beer into the garden to share with Billy my garden gnome where we had a great talk about all things to do with gardening.....o dear maybe the beer was starting to take effect...ha ha...give it a try as it was very tasty...enjoy !
