S.T.P !

Sticky Toffee Pudding is possibly every ones idea of the best winter comforting hot dessert ! Even the name sounds all gooey and messy and delicious ! I made some today and this is one of the best recipes I have for the King of Winter puds . (In my Opinion anyway !) This recipe makes about 4-6 portions depending on how cold you are !


In a pan place 200 grams of pitted Dates now add 300 mls of water and bring to the boil. Meanwhile melt 75g of butter and pour into mixing bowl. Now add 175gms of Dark Brown Sugar and mix well. Now add to the bowl 1 tbsp of golden syrup, 2 beaten eggs,  and1 tsp of Vanilla extract. Now mix well. Next sieve 200 grams of Self Raising Flour and combine well into bowl mixture.
Meanwhile the pan with the dates in should have boiled by now. Take off the heat and add 1 tbsp of Bicarbonate soda. Watch with much fun in a child like way as the date mix froths up and bubbles away. Allow to cool slightly and then pour the contents of the pan into the bowl containing your other ingredients and combine well. Next pour out into a baking tray lined with grease proof paper and then put into the oven at 180 degree C for about 35 minutes. Poke a knife into the sponge mix and if the knife comes out clean then its ready.
To make some fab Toffee sauce to accompany this dish in a pan add 100g of dark sugar and 100g of unsalted butter. When the butter has melted add 200 mls of double cream. Stir well and allow to simmer for a few minutes. Pour loads and loads of sauce over your pudding and then mount a ball of Vanilla Ice-cream on top of your sponge….! I cannot think of a better pudding to warm you after a nice windswept walk on the beach…..Enjoy !
