Sometimes My 18 year old 6ft 5 nephew Kurtis sends me a text to see how his poor old uncle is. I was very fortunate to receive such a text from him last week and as always it ended in him wanting something. Not money on this occasion which made a nice change but he wanted a Flapjack making.
Me being a kind hearted Uncle was only too happy to make one for the young pup !
So here is my recipe for flapjack. I quite enjoyed making it as I have not made it for years....
Nephew's Flapjack
Mix 175 grams of large rolled oats with 125 grams of light brown sugar.
Next Melt 150 grams of unsalted Butter with 6 TBSP of golden syrup in a pan.
Next combine the melted butter and Golden syrup with the Oat mixture and mix well.
Then press the mixture into a well greased baking tray. I used half of the mixture to form a layer on the bottom of the tray first and then pressed it down into the tin with the back of a spoon. I then scattered some little Milky way stars on top of this layer because Kurtis loved these when he was a child. I then used the rest of the mixture to cover the stars and pressed that down as well.
Now bake in the over on 180 degrees C for about 25 minutes. When the flapjack is cooked it should have a lovely golden colour. Allow it to cool slightly for a few minutes and then portion your flapjack up before it sets because its a bit of a mission impossible to cut if you do let it set !
OK just because I was feeling in a good mood and for extra moreishness ! (not sure if that's a word but probably a word Kurtis would use !!! Ha ha! ) I melted some Caramel Chocolate and poured that over the flapjack and then crumbled some Chocolate flake over the melted gooey chocolate to give it another texture !
Kurtis popped a long to pick it up and it made me smiled when he said it was "reet Bari like Kev" as he started devouring it straight away.....enjoy.
