Yum Yum Pork !

Lemony Pork Fillet with Sweet Chili ketchup.


This is really quick and simple but has bags of flavour and the lemony crunchy salad is fab !
This dish like all the ones Ill post are for one portion only until I meet the girl of my dreams to share with ha ha ha ! Still beers good while I wait ha ha.

OK you need to marinade the pork for a while. Either mix it up the night before or in the morning before you pop to work. All you need is,

120 grams of diced Pork fillet.
1 tbsp of Chinese five spice.
The juice of a whole lemon.
1 Tbsp of Tamari sauce. (Its just a soy sauce but with less wheat used if any in some cases.)

Place the pork in a bowl and mix and rub in the Chinese five spice powder and then transfer the diced pork into a food storage bag and then pour in the rest of the marinade ingredients and scrunch together ensuring all the the pork is covered then leave to marinade for at least 4 hours in the fridge.


Right its eating time now and your pork is nicely marinaded. I have said it before and il say it again I love my griddle pan and cook as much as I can on it or certainly start it off on it as for most things it does not require any oil and I like that almost (but not quite) bbq flavour hint it can add to your food. So on a hot griddle pan you want to colour your chunks of meat all over.


When nicely coloured transfer to a baking tray and finish the cooking in the oven set at 180 degrees c fan assisted. Its probably only going to take no more than 10 minutes if less to finish the cooking of the half raw pork but like I said before buy a food probe and when it hits 75 degrees C in the centre of the meat it will be cooked and should still be nicely moist.
Right while meat is finishing its cooking or resting in a warm place finish the dish off.

The salad is very easy all you will need is,

100 grams finely sliced Cucumber.
100 grams roughly sliced mangetout.
40 grams of quartered baby tomatoes. I used standard size tomato's and scooped the seeds out and sliced that into strips and its great for presentation but if your hungry just whack all the baby ones in !
20 grams of roughly chopped pickled jalapenos.
The juice of half a lemon.

Place all the ingredients in a bowl and gently mix together. Add the lemon juice and mix again.



For the sweet Chili ketchup sauce you can make one but it takes a little bit of time and when I get round to it (lazy cook) I will post the recipe but on this occasion if you are pushed for time all you need is,

30 grams of Organic tomato ketchup.
Juice of 1 lime.
40 grams of Tamari sauce.
20 grams of sweet chill sauce.

And all you do is place the lot in a bowl and mix. Simple !


That's it just plate it all up and just dive in. This is a fantastic dish and I worked it out as less than 400 calories to. The salad is so fresh and crunchy and the sauce for something so quick and easy is so fab ! You can use beef or chicken for this dish to so in my eyes its a winner....enjoy !
